Description
A simple recipe for black beans and rice combined with sliced sausage.
Ingredients

- 1 tablespoon olive oil
- 1 pound smoked sausage, sliced
- 1 medium onion, chopped
- 1 green bell pepper, chopped
- 2 cloves garlic, minced
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 cup water
- 1 teaspoon ground cumin
- 1/2 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups cooked white rice
Instructions
- Heat olive oil in a large skillet over medium heat. Add sausage and cook until browned, about 5 to 7 minutes. Remove sausage and set aside.
- Add onion and bell pepper to the skillet. Cook until softened, about 5 minutes.
- Stir in garlic and cook for 1 minute more until fragrant.
- Add black beans, diced tomatoes (with liquid), water, cumin, oregano, salt, and pepper to the skillet. Bring the mixture to a simmer.
- Return the cooked sausage to the skillet. Reduce heat to low, cover, and cook for 15 minutes, allowing flavors to combine.
- Serve the bean and sausage mixture over cooked white rice.
Notes
- For extra flavor, use chicken or andouille sausage.
- You can add a dash of hot sauce for heat.
