Description

A fresh and easy salsa combining black beans, corn, peppers, and lime juice.

Ingredients

Scale
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can sweet corn, drained
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeño pepper, seeded and minced
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup lime juice (about 2 limes)
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Combine the rinsed black beans, drained corn, diced red bell pepper, chopped red onion, minced jalapeño, and cilantro in a medium bowl.
  2. In a small bowl, whisk together the lime juice, olive oil, salt, and pepper.
  3. Pour the dressing over the bean and corn mixture.
  4. Stir gently until all ingredients are well combined.
  5. Cover the bowl and refrigerate for at least 30 minutes before serving to allow the flavors to meld.

Notes

  • For a smokier flavor, use fire-roasted corn.
  • Adjust the amount of jalapeño based on your preference for heat.
  • This salsa tastes best when made a few hours ahead of serving.
