Description
A simple casserole combining ground beef and zucchini.
Ingredients

- 1 pound ground beef
- 1 medium onion, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 (10.75 ounce) can condensed cream of mushroom soup
- 1/2 cup milk
- 2 medium zucchini, sliced
- 1 cup shredded cheddar cheese
Instructions
- Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Lightly grease a 9×13 inch baking dish.
- Brown the ground beef and onion in a skillet over medium heat. Drain off any excess fat.
- Stir in the salt and pepper.
- In a large bowl, combine the browned beef mixture, cream of mushroom soup, and milk. Mix well.
- Spread half of the beef mixture into the prepared baking dish.
- Arrange the sliced zucchini evenly over the beef layer.
- Top the zucchini with the remaining beef mixture.
- Sprinkle the shredded cheddar cheese over the top layer.
- Bake for 30 minutes, or until the cheese is melted and bubbly and the casserole is heated through.
Notes
- You can substitute cream of celery soup for cream of mushroom soup if you prefer.
- For a firmer texture, you can lightly sauté the zucchini slices before assembling the casserole.
