  • 1 pound beef sirloin, thinly sliced
  • 4 cups beef broth
  • 2 tablespoons soy sauce
  • 1 tablespoon mirin
  • 1 teaspoon grated fresh ginger
  • 2 cloves garlic, minced
  • 8 ounces ramen noodles
  • 2 large eggs
  • 1 cup chopped bok choy
  • 1/4 cup sliced green onions
  • 1 tablespoon sesame oil

Instructions

  1. In a medium pot, combine beef broth, soy sauce, mirin, ginger, and garlic. Bring to a simmer over medium heat.
  2. Add the thinly sliced beef to the simmering broth. Cook for 2-3 minutes, or until the beef is cooked through.
  3. Add the ramen noodles and bok choy to the pot. Cook according to noodle package directions, usually 3-5 minutes, until noodles are tender and bok choy is wilted.
  4. While the noodles cook, prepare the eggs. You can soft-boil them by simmering them in a separate pot of water for 6-7 minutes, then peeling and halving them.
  5. Divide the ramen, beef, and bok choy among serving bowls.
  6. Top each bowl with a halved soft-boiled egg and sliced green onions.
  7. Drizzle with sesame oil before serving.

Notes

  • For a richer broth, you can add a splash of fish sauce.
