Simple recipe for moist banana oatmeal muffins.

- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup rolled oats
- 1/2 cup packed brown sugar
- 1/4 cup melted unsalted butter
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup mashed ripe bananas (about 2–3 bananas)
Instructions
- Preheat your oven to 375 degrees F (190 degrees C). Grease a 12-cup muffin tin or line with paper liners.
- In a large bowl, whisk together the flour, baking soda, salt, and cinnamon. Stir in the rolled oats.
- In a separate medium bowl, mix the brown sugar, melted butter, egg, and vanilla extract until combined.
- Add the mashed bananas to the wet ingredients and mix well.
- Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix.
- Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.
- Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
- You can add 1/2 cup of chopped walnuts or chocolate chips for extra flavor.
- Use very ripe bananas for the best sweetness and moisture.
