A simple recipe for chicken breasts and mixed vegetables coated in a sweet and tangy balsamic glaze.

- 1.5 lbs boneless, skinless chicken breasts
- 1 lb mixed vegetables (broccoli, carrots, bell peppers)
- 1/4 cup balsamic vinegar
- 2 tablespoons olive oil
- 1 tablespoon brown sugar
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- Salt to taste
- Black pepper to taste
Instructions
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
- In a small bowl, whisk together the balsamic vinegar, olive oil, brown sugar, oregano, and garlic powder to make the glaze.
- Cut the chicken breasts into serving-sized pieces if they are very large.
- Place the chicken and vegetables in a large bowl. Pour half of the balsamic glaze over the chicken and vegetables and toss to coat evenly.
- Arrange the coated chicken and vegetables in a single layer on a baking sheet lined with parchment paper.
- Bake for 20 minutes.
- Remove the baking sheet from the oven and brush the remaining glaze over the chicken and vegetables.
- Return to the oven and bake for another 5 to 10 minutes, or until the chicken is cooked through and the internal temperature reaches 165 degrees Fahrenheit (74 degrees Celsius).
- Season with salt and pepper before serving.
Notes
- You can substitute the vegetables with zucchini, onions, or mushrooms.
- For a thicker glaze, simmer the remaining glaze in a small saucepan over medium heat until it reduces slightly after the chicken is done cooking.
