Description
Simple baked muffins with a sweet vanilla glaze, resembling classic donuts.
Ingredients
Scale
- 1 3/4 cups all-purpose flour
- 3/4 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup milk
- 1/4 cup unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup powdered sugar (for glaze)
- 2 tablespoons milk (for glaze)
- 1/2 teaspoon vanilla extract (for glaze)
Instructions
- Preheat your oven to 350°F (175°C). Grease a standard 12-cup muffin tin or line with paper liners.
- In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
- In a separate medium bowl, whisk together the milk, melted butter, egg, and 1 teaspoon of vanilla extract.
- Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix.
- Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
- Bake for 15 to 18 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
- While the muffins cool, prepare the glaze: Whisk together the powdered sugar, 2 tablespoons of milk, and 1/2 teaspoon of vanilla extract until smooth.
- Dip the top of each cooled muffin into the glaze, allowing excess to drip off. Let the glaze set before serving.
Notes
- For a thinner glaze, add a few more drops of milk.
- You can use buttermilk instead of regular milk for a slightly tangier flavor.
- Do not overbake the muffins; they dry out easily.
