Ingredients

  • 4 medium Russet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. Wash and thinly slice the potatoes into rounds, about 1/8 inch thick. Do not peel them.
  3. Toss the potato slices with olive oil, salt, and pepper in a bowl.
  4. Arrange the potato slices in a single layer on a baking sheet.
  5. Bake for 20 minutes.
  6. Remove the baking sheet from the oven and sprinkle the cheese evenly over the potatoes.
  7. Return to the oven and bake for another 5 to 7 minutes, or until the cheese is melted and bubbly.
  8. Serve immediately.

Notes

  • For crispier edges, you can broil for the last minute, watching carefully to prevent burning.
