Description

A recipe for baked chicken marinated in a sweet and spicy jerk sauce with pineapple.


Ingredients

  • 2 lbs chicken pieces (thighs or breasts)
  • 1 cup pineapple juice
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 2 tablespoons jerk seasoning paste
  • 1 tablespoon fresh ginger, grated
  • 4 cloves garlic, minced
  • 1 scotch bonnet pepper, minced (optional, for heat)
  • 1 cup fresh pineapple chunks
  • 1 tablespoon vegetable oil

Instructions

  1. In a bowl, mix the pineapple juice, soy sauce, brown sugar, jerk seasoning, ginger, garlic, and minced scotch bonnet pepper.
  2. Place the chicken pieces in a large zip-top bag or dish. Pour the marinade over the chicken, ensuring all pieces are coated. Marinate in the refrigerator for at least 4 hours, or preferably overnight.
  3. Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Lightly grease a baking dish.
  4. Remove the chicken from the marinade, reserving the liquid. Place the chicken in the prepared baking dish.
  5. Scatter the fresh pineapple chunks around the chicken.
  6. Bake for 30 minutes.
  7. While the chicken bakes, pour the reserved marinade into a small saucepan. Bring to a boil over medium heat and cook for 5 minutes, stirring occasionally, until slightly reduced. This is your basting sauce.
  8. After 30 minutes of baking, brush the chicken generously with the reduced sauce.
  9. Return the chicken to the oven and bake for another 15 to 25 minutes, or until the internal temperature reaches 165 degrees Fahrenheit (74 degrees Celsius) and the juices run clear.
  10. Let the chicken rest for 5 minutes before serving.

Notes

  • If you prefer less heat, remove the seeds and membranes from the scotch bonnet pepper before mincing, or omit it entirely.
  • For crispier skin, you can briefly broil the chicken for the last 2-3 minutes of cooking, watching carefully to prevent burning.
