A simple recipe for a baked casserole featuring chicken and cheese.
Ingredients

- 2 cups cooked, shredded chicken
- 1 (10.5 ounce) can cream of chicken soup
- 1/2 cup milk
- 1 cup shredded cheddar cheese, divided
- 1/2 cup crushed crackers (like Ritz)
- 2 tablespoons melted butter
Instructions
- Preheat your oven to 375 degrees Fahrenheit. Lightly grease an 8×8 inch baking dish.
- In a medium bowl, combine the shredded chicken, cream of chicken soup, milk, and half of the shredded cheese. Mix well.
- Spread the chicken mixture evenly into the prepared baking dish.
- In a small bowl, mix the crushed crackers and melted butter. Sprinkle this mixture over the top of the chicken mixture.
- Bake for 20 minutes.
- Remove the casserole from the oven and sprinkle the remaining half of the shredded cheese over the top.
- Return to the oven and bake for another 5 to 10 minutes, or until the cheese is melted and bubbly.
- Let it stand for 5 minutes before serving.
Notes
- You can use rotisserie chicken for quicker preparation.
- For a different flavor, substitute Monterey Jack cheese for cheddar.
