A simple recipe for a baked grilled cheese sandwich using dairy-free cheese and BBQ chicken.

- 4 slices bread
- 1 cup cooked, shredded chicken
- 1/4 cup dairy-free barbecue sauce
- 4 slices dairy-free cheese
- 2 tablespoons vegan butter or oil for brushing
Instructions
- Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius).
- In a small bowl, mix the shredded chicken with the barbecue sauce until the chicken is fully coated.
- Place two slices of bread on a clean surface. Top each slice with two slices of dairy-free cheese.
- Divide the BBQ chicken mixture evenly over the cheese layers.
- Top with the remaining two slices of bread.
- Lightly brush the outside of each sandwich with vegan butter or oil.
- Place the sandwiches on a baking sheet.
- Bake for 10 to 12 minutes, flipping halfway through, until the bread is golden brown and the cheese is melted.
