Description

A simple cold pasta salad featuring tortellini, bacon, and ranch dressing.


Ingredients

  • 1 (16 ounce) package cheese tortellini, cooked and drained
  • 8 slices bacon, cooked and crumbled
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely chopped
  • 1/2 cup shredded cheddar cheese
  • 1 cup ranch dressing
  • 1/4 cup water (optional, for thinning)

Instructions

  1. Cook the tortellini according to package directions. Drain well and place in a large bowl.
  2. Add the crumbled bacon, halved cherry tomatoes, chopped red onion, and shredded cheddar cheese to the bowl with the tortellini.
  3. Pour the ranch dressing over the salad ingredients.
  4. Gently toss everything together until the pasta and vegetables are evenly coated.
  5. If the salad seems too thick, add water one tablespoon at a time until you reach your desired consistency.
  6. Cover the bowl and chill in the refrigerator for at least 30 minutes before serving.

Notes

  • You can substitute frozen tortellini if you prefer; thaw and cook according to package instructions.
  • For extra flavor, add 1/2 cup of frozen peas to the salad when adding the other vegetables.
