Description
Tender short ribs slow-cooked in a savory apple cider sauce.

- 3 lbs bone-in beef short ribs
- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 1 cup apple cider
- 1 cup beef broth
- 1/2 cup dry red wine
- 2 sprigs fresh thyme
- 1 bay leaf
- Salt and black pepper to taste
Instructions
- Season the short ribs generously with salt and pepper.
- Heat the olive oil in a large Dutch oven over medium-high heat. Brown the short ribs on all sides. Remove the ribs and set them aside.
- Add the onion, carrots, and celery to the Dutch oven. Cook until softened, about 5-7 minutes.
- Add the garlic and cook for 1 minute more until fragrant.
- Pour in the apple cider and red wine, scraping up any browned bits from the bottom of the pot. Let the liquid reduce slightly, about 3 minutes.
- Return the short ribs to the pot. Add the beef broth, thyme sprigs, and bay leaf. The liquid should mostly cover the ribs.
- Bring the liquid to a simmer, then cover the Dutch oven.
- Transfer the pot to a preheated oven at 325 degrees Fahrenheit (160 degrees Celsius).
- Braise for 3 to 3.5 hours, or until the meat is very tender and easily pulls apart with a fork.
- Remove the ribs from the liquid. Skim any excess fat from the sauce. Taste the sauce and adjust seasoning if needed.
- Serve the short ribs with the braising liquid spooned over top.
Notes
- You can chill the braising liquid overnight to easily remove solidified fat from the top before reheating.
- For a thicker sauce, remove the ribs and simmer the remaining liquid on the stovetop until it reduces to your desired consistency.
