Ingredients

- 1 cup shredded zucchini, squeezed dry
- 1 cup corn kernels (fresh or frozen)
- 1/2 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 1 large egg, beaten
- 2 tablespoons chopped fresh chives
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- Cooking spray
Instructions
- In a medium bowl, combine the shredded zucchini, corn kernels, flour, Parmesan cheese, beaten egg, chives, baking powder, salt, and pepper. Mix until just combined.
- Preheat your air fryer to 375°F (190°C).
- Lightly spray the air fryer basket with cooking spray.
- Drop spoonfuls of the batter into the air fryer basket, ensuring they don’t touch. You may need to cook in batches.
- Air fry for 8-10 minutes, flipping halfway through, until golden brown and cooked through.
- Serve hot.
Notes
- For extra crispiness, ensure you squeeze as much moisture as possible from the shredded zucchini.
- Serve with your favorite dipping sauce, such as sour cream or a spicy aioli.
