Description

Ingredients

  • 2 large Russet potatoes
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons chopped fresh chives (for garnish)

Instructions

  1. Scrub the potatoes well. Cut each potato into 8 wedges.
  2. In a bowl, toss the potato wedges with olive oil, salt, and pepper until evenly coated.
  3. Place the seasoned wedges in the air fryer basket in a single layer, working in batches if necessary.
  4. Air fry at 380°F (195°C) for 15 minutes, shaking the basket halfway through.
  5. Flip the wedges and cook for another 5-7 minutes until golden brown and crisp.
  6. Sprinkle the shredded cheese over the hot wedges in the basket.
  7. Return the basket to the air fryer for 1-2 minutes, or until the cheese is melted and bubbly.
  8. Remove from the air fryer, sprinkle with chives, and serve immediately.

Notes

  • For extra crispiness, soak the cut potatoes in cold water for 30 minutes before drying them completely.
