Description
A refreshing and festive watermelon mojito perfect for the 4th of July.
Ingredients

- 4 cups cubed watermelon
- 1/2 cup fresh lime juice
- 1/2 cup white rum
- 1/4 cup simple syrup
- 1/4 cup fresh mint leaves
- Ice
Instructions
- In a blender, blend the cubed watermelon until smooth. Strain the watermelon juice into a pitcher, discarding the solids.
- Add the lime juice, white rum, and simple syrup to the pitcher with the watermelon juice. Stir to combine.
- Lightly muddle the mint leaves in the bottom of glasses.
- Fill the glasses with ice.
- Pour the watermelon mixture over the ice.
- Garnish with mint sprigs and watermelon wedges, if desired.
Notes
- Adjust the amount of simple syrup to your desired sweetness.
- For a non-alcoholic version, omit the rum and add sparkling water or club soda.
